(KCBS) – How about some roasted beets for Thanksgiving? Don’t hesitate to try some variations like Chiogga Beets or Golden Beets to get some different colors in your dish. KCBS Food and Wine Editor Narsai David offers this recipe for the holidays.

Serves 4-6

*2 bunches beets, washed, and greens removed
juice of one orange
1/4 cup balsamic vinegar
1/2 cup white wine
1/4 tsp red pepper flakes
1/2 tsp salt

Roast Beets in a 350° oven, just like potatoes, until tender when tested with a fork (about 45 minutes). Set aside to cool. Simmer orange juice, vinegar and wine until reduced to 1/2 cup. Remove from heat and stir in pepper and salt. As the dressing cools, peel and quarter the beets. Toss with the dressing and serve at room temperature.

NOTE: Beet greens can be cooked just like Swiss chard, maybe a little bit longer until tender.
