Narsai David Recipe: Sweet Potato, Apple, Cranberry Casserole
(KCBS) - KCBS Food and Wine Editor Narsai David said even those who say they don't like sweet potatoes really end up loving this dish.
Serves 4-6
1 lb. sweet potatoes
3 green apples, peeled, cored and cut in wedges
1 cup fresh cranberries
1/2 cup maple syrup or homemade syrup (see below)
2 TBS butter
Peel, quarter, and boil the sweet potatoes. Drain and place in a small casserole. Peel and core apples and cut into wedges. Add to casserole. Sprinkle cranberries over top. Drizzle with syrup and dot with small pieces of butter. Bake at 375°F for 25-30 minutes or until syrup is bubbling and starting to glaze over.
HOMEMADE SYRUP: Heat 3/4 cup light brown sugar with 1/3 cup water until sugar is dissolved. Simmer 5 minutes or until reduced to syrup consistency. Use like maple syrup.
