Narsai David Product Review: Fra'Mani Salumi

(KCBS) - KCBS Food and Wine Editor Narsai David says salumi seems to have replaced charcuterie in the last 20 years among the restaurant and deli chefs and cooks. Fra'Mani is one of the leading producers of salumi.

Charcuterie is the French art of converting things like pigs, ducks, and geese to pates, salami, and ham; salumi is the Italian version of the same thing. And it's showing up in a lot of restaurants. At the recent Fancy Food Show in San Francisco there were lots of salumi.

Fra'Mani is the leading producer in the United States it seems. "Fra'Mani" means "between or among hands." They produce both dry cured and cooked salami and make the most amazing varieties. They also pride themselves in the fact that they do not add nitrites or msg.
