Narsai David Recipe: Non-Fat Berry Parfait

(KCBS) - KCBS Food and Wine Editor Narsai David shares a simple dessert recipe that is not only delicious but non fat.

Serves 8

*1 quart non-fat yogurt
1 basket blueberries
1 basket raspberries
1 basket strawberries
**4-6 TBS honey
4 TBS finely chopped candied ginger

Set a colander into a mixing bowl. Line the colander with a fresh tea towel. Be sure the brand of yogurt you have chosen has no binding agents listed as ingredients (some of the common binders are: modified food starch, pectin, and carrageenan). Pour the yogurt into the towel. Fold ends of towel over the yogurt and place in refrigerator to drain overnight. After draining, the yogurt will be almost as thick as sour cream or cream cheese. Place in a bowl and flavor with sweetener and ginger.

To serve: Use eight wine glasses or parfait glasses and create layers starting with the yogurt mixture in the glass followed by a layer of blueberries, then more yogurt, then raspberries. Finish with a final layer of yogurt topped with one perfect strawberry.

• We like to use Nancy's non-fat yogurt as it is thickened only with non-fat milk powder, and therefore drains out the whey very easily.

** A non-caloric sweetener such as Splenda is a perfect substitute for sugar
