Narsai David Recipe: Victoria’s Cheddar Cheese/Pecan ‘Cookies’

(KCBS) – KCBS Food and Wine Editor Narsai David says this looks like a cookie, and has the texture of a cookie, but is savory. So it’s really a cracker disguised as a cookie, and it is fabulous. He shares a recipe for this savory ‘cookie’ from Victoria Emmons who had a very famous catering company called Victoria’s in Palo Alto.

Makes approximately 4 dozen 1 1/2″ “cookies”

2 c. flour
1 tsp. salt
1/8 tsp. cayenne
1/8 tsp. baking powder
14 tbs.cold unsalted butter, cut up
1 1/2 c. grated sharp cheddar
1 1/2 c. grated parmesan
1 beaten egg
1/2 c. chopped toasted pecans

Glaze: 1 yolk beaten with a few drops of water, sea salt

In food processor mix 4 first ingredients. Add the following 4 next ingredients and process until just forming a dough.

Lightly flour a cutting board and kneed pecans into dough. Roll out to form a 1/4″ thick circle. Wrap and refrigerate.

Preheat oven to 400. Line pans with parchment paper. Cut “cookies” into desired shapes and place 1/2″ apart. Brush with glaze and sprinkle with sea salt

Bake 12-16 minutes or until golden brown and cooked through. Best to rotate pans in mid-cooking.
