SAN FRANCISCO (KCBS) – Two essential references on food and wine by the Culinary Institute of America have been reissued in handsome new editions, both by Wiley.
Authors Steve Kolpan, Brian H. Smith and Michael Weiss have completely revised Exploring Wine. The book offers an entire education on wine starting with the fundamentals of wine tasting. Wines of the New World and wines of the Old World are treated separately. The others also look at the connections between wine, food and health, and devote ample space to wine service, storage and purchasing.
Another classic, The Professional Chef, goes into its 9th edition with a more user friendly design that features hundreds of photographs.
For the first time, a volume consulted by many serious home cooks is also available in an interactive edition exclusively for the iPad.
