SUBS Inc. owner Rami was born in in the Sunset District of San Francisco. He grew up "on the job" at his father's business Noe Valley Deli on 24th and Noe.

It's there that he learned the sandwich business. It was also at the Noe Valley Deli that I was first introduced to hummus and falafel and many other middle eastern flavours and recipes made from scratch by his father, often with Rami at his side. His father retired last year.

To add to his "on the job" education, Rami also went to college at USF where he scored a business accounting degree, essential for a young entrepreneur.

In 2006 opportunity knocked when Rami had the chance to take over the corner spot at 24th and Castro (formerly Rory's and Buds Ice Cream) and launch SUBS Inc.

The menu featured hearty, healthy sandwiches stacked to the gills with meats, cheeses, veggies, peppers, sauces & spices. The business thrived and soon the heir to the NV Deli was on his way, making his mark with top notch super tasty sandwiches.

An early fan was SF GIANTS baseball star MATT CAIN. He ordered a sub filled with meat, a protein heavy sub fit for a baseball star. To honor his regular customer Rami named a sub after him - THE MATT CAIN. The recipe is featured below.

Nancy Pelosi stopped by on a neighborhood stroll, the press captured the photo opp… must have been election time. However the former speaker of the house did send Rami a nice note of thanks for the ice cream and for his contribution to the Noe Valley neighborhood. The photo and note are framed and in a prime spot on the wall at SUBS Inc. Artwork from local artists also adorn the walls of Rami's deli….another nod to local community.

My radio pal Greg Sherrell of 99.7 [NOW!]'s Fernando and Greg is also a regular….no framed photo YET on the wall. Perhaps Greg and I need to plan a lunch here soon!

I stopped by my neighborhood SUB shop recently for our Foodie Chap chat. Owner Rami asked me to come up with my own SUB - a new addition for his menu. The "LIAM" is a piece of me, a sandwich brimming with the things I love; Irish cheddar, California tomatoes, turkey & cranberry . The full recipe is below. Hope you like it. Subs Inc. "Matt Cain Sub" (credit: Foodie Chap/Liam Mayclem)

The "Matt Cain Sub" Recipe

Ingredients:

3 slices turkey
3 slices ham
10 slices salami
1 or 2 slices mortadella
2 slices provolone cheese
red onion
mustard
mayonnaise
lettuce
tomato
Italian vinaigrette(home made or store bought)
sub roll of choice(Dutch crunch recommended)

Directions

1. Slice bread open
2. Spread mustard on bottom side
3. Lay out meats and cheese on top of each other 4. toast the sandwich 5. after toasting, spread the mayonnaise on the other side of bread
6 Add lettuce, tomato and onion
7. Close, cut and serve
