Narsai David Recipe: Almond Macaroons

(KCBS) - KCBS Food and Wine Editor Narsai David says it's really easy to make fine almond macaroons at home. Look at the recipe: only 3 ingredients!


YIELD 12 3" Cookies

*14-16 oz Almond Paste
1 cups Sugar
4 Egg whites

Preheat oven to 350 (325 Convection).
Beat almond paste and sugar in a food processor until fine granules.
Beat in egg whites slowly until smooth.
Let rest for 20 minutes.
Then beat on high until smooth.
Pipe out 12 - 2 1/2" circles through a pastry bag with a round tip onto a parchment lined sheet pan. Pipe straight down in center, not in a circular pattern
Sprinkle lightly with sugar.
Gently press down until surface is smooth.
(You may have to keep dipping your hand in sugar so it doesn't stick to the cookie.)
Bake 20-25 minutes, or until a nice brown color.
Cool slightly on tray.
Place another pan over it and flip it over, parchment and all.
Brush parchment with water.
When just about cool, carefully peel off parchment.

*Many retail packs are 7oz.
