(KCBS) – KCBS Food and Wine Editor Narsai David visited a local bakery that is entirely gluten free. The Mariposa Baking Company is in Oakland and offers everything from breads, cakes, rolls, and pizzas – all gluten free.
So how do you make a really good plain white bread if you don’t have any wheat in it? They make it in two forms in a loaf pan where it has a dense but nice chewy character. The same dough is rolled out into a narrow baguette and when you get it so it’s crusty it is the most unusual and most delicious gluten free bread! Make sure it’s crisp – if you take it home and it got soft put it in a hot oven for 5 minutes to crisp up the outside.
Their pumpkin chocolate chip muffin is very light and fluffy. They also offer some breads that are dairy free and some that are vegan. The rosemary roll has a soft, fine chewiness and a subtle rosemary flavor. And the coffee cake is so soft and delicate it just crumbles on your tongue.
