Kick Off Raiders Season With Some Spice

Score a touchdown by showing up with some great tailgating food. This recipe will have you warmed up and ready for the season of games to come. However, just know that you're setting the bar high for expectations. Regardless of the Raiders game conclusion, this is a guaranteed win.

Southern-style barbecue comfort food isn't just for those places south of the Mason-Dixon line. Raiders fans can enjoy the cuisine of Food Network's Paula Dean, complements of Paula's Home Cooking. The spice of this chili sauce can be experimented with depending on one's palate, but if daring enough, the spicier the better. Onion rings mixed with salt offers a tantalizing tango for your taste buds for an afternoon at a tailgating party before a Raiders game. If you're tired of French fries and hot dogs, switching to onion rings with a dash of spice takes the boring out of a tailgating barbecue.

With the popularity of grilling at tailgates, you can either pack your own or borrow a neighbor's grill to put the finishing touches on this snack. After preparing the onion rings at home, quickly warm them up with a few minutes on the grill. This will give you enough time to set out the dip and then transport the toasty-hot onion rings onto fans' plates. You'll easily score big points with this crowd pleaser.

Fried Onion Rings with Chili Sauce

Chili Sauce

  • 1 cup mayonnaise
  • 3 tablespoons chili sauce
  • 1 teaspoon chili powder
  • One-eighth teaspoon cayenne pepper

Onion Rings

  • 2 medium white or yellow onions
  • 1 teaspoon seasoned salt
  • 2 cups all-purpose flour
  • Vegetable oil
  • Salt

Directions:

Preheat the oil to 360 degrees Fahrenheit. Slice the onions into very thin rings and separate. Spread them out and sprinkle with seasoned salt. Place the flour in a re-sealable plastic bag. Put the onion rings into the bag in small batches, close tightly and shake until each is fully coated. Fry the onion rings in batches for 3 to 4 minutes until they are brown and crispy. Remove with tongs and drain on paper towels. Taste and season with salt, if necessary.

To make the chilli sauce, combine the mayonnaise, chilli sauce, chilli powder and cayenne in a small bowl and stir well. Cover and chill until serving time. This can be stored away in a cooler for easy transportation to the tailgating spot.
