Tony’s Table: La Mar’s Lomo Saltado

Ingredients
4 oz of flat iron steak cut in 3/4 inch by 2 inches
2 oz of red onions cut slices of an inch with the grain
4 oz of potato cut like French fries
2 Roma tomatoes, peeled and sliced in 3 parts
2 oz of light soy sauce
2 oz of white vinegar
2 oz of oyster sauce
0.5 oz of unsalted butter
Pinch of chopped cilantro
1 Green onion

Method
Marinade flat iron with soy sauce, white vinegar and oyster sauce for 15 min.
In the mean time in another pan, fry potato on low/med heat, turning every minute.
Remove meat from sauce and season the steak with salt and pepper. Set sauce aside for later.
Heat the wok or frying pan on med/high heat, and sear meat on all sides, remove and place aside.
Using the same pan, sauté onions for 30 seconds, then add meat, tomatoes and remaining marinade mix, lower heat, add butter and let sauce reduce.
Add cilantro and green onions to finish.
Plate in shallow soup bowl, add fries on top, accompany with steamed rice.

Serves 1
